Ugali is Kenya's staple meal and has been prepared similarly for decades.

How to make ugali

It typically involves boiling water and adding small amounts of flour while stirring the mixture.

The flour is added in small portions until the mixture solidifies. It is important to stir until all lumps of flour disappear, and a sweet aroma indicates that the ugali is ready.

However, a new method of cooking ugali has taken Kenya by storm. The new way of cooking, bolibo ugali, was first shared in the Let's Cook Kenyan Meals Facebook group.

Many Kenyans have tried the new method with mixed results.

How to prepare bolibo ugali

The new cooking method involves heating the maize flour until it releases a sweet aroma.

You separately heat water to boiling point, then add it to the flour.

Stir the mixture until you get the desired texture and all flour lumps are gone.

While the new method worked for some Kenyans, most have complained that the ugali looked funny.

A woman shared photos showing how it backfired, claiming that her husband chased her away.

“Let me tell you, Maina. This peer pressure can destroy my marriage.
I was chased away at night, and I am currently upcountry. I don’t see if my husband will come for me,” she wrote

Kenyans shared their recommendations and experiences trying to cook ugali similarly.

Eunice Lefty:

“You put a full flame and cooked for a long time. You use low heat don't wait for the flour to burn. Who will eat that burnt offering?”

Christine Tee Mwikali:

“Kimeniramba. We slept hungry today without talking to each other.”

Hildah Achieng:

“So I used cold water, and the ugali was uncooked. I slept hungry.”

Precious Prisca:

“I will try when I'm alone in the house.”

Which record did Chef Maliha break?

However, she did not stop cooking and surpassed the naysayer's expectation recording a new time of 90 hours and 15 minutes.
